Like most people, I like to start the year with a little reboot. I am not going to kid myself and promise to go to the gym every day (not going to happen) or do Whole 30. Life with two kids, a full time job, and painting, leaves little room for weekly menu planning or recipes that take hours to prepare. I've done just about every eating plan under the sun: vegan, gluten free and dairy free. I can't commit to 100% clean eating because I like pasta, and sometimes I just want chicken fingers, but when I am at home cooking I do my best to only use wholesome ingredients that will nourish our family. One tool I use a lot is Instacart. It saves time, and I don't have to go the grocery store with two little kids. I can get food from both Publix and Whole foods, and I don't have to spend a lot of time scouring the aisles for everything I need. That lets me search for ingredients for a new recipe, order food online, and take care of the kids all at the same time.
Those of you watching my instagram story last night saw me making carrots with Oliver.
I love letting Oliver help me cook because he gets so invested and wants to eat the food! These were from Gwyneth Paltrow's cookbook It's All Good.
She has a special section called "The Kid's Menu" filled with food your kids are guaranteed to love. These carrots are Moses' favorites.
Roasted Carrots with Honey + Soy Sauce (serves 4)
- 8 carrots, peeled and cut into 2 inch lengths
- 2 tablespoons extra virgin olive oil
- 2 tablespoons raw honey
- 2 tablespoons soy sauce
Preheat oven to 450 and line sheet pan with parchment paper.
Bring a large pot of salted water to the boil. Put the carrots in the water and cook until they lose their bite without being too soft (about 5-6 minutes). Meanwhile whisk together the olive oil, honey and soy sauce in a large mixing bowl. Drain the carrots thoroughly, add them to the bowl with the honey mixture and stir to coat them evenly. Transfer the carrots to the sheet and roast stirring occasionally until completely caramelized (about 15 minutes).
