Last night we had the most delicious Garnish & Gather meal! This was my first time making polenta, and I was surprised how easy it was! The meal was easy, healthy and delicious. You should try it this week. :) Feeds 2. Takes about 40 minutes.
Ingredients
- 2 Cups Zucchini
- 1/2 Cup Polenta
- 1 Lemon
- 2 Tablespoons Fresh Parsley
- 2 Tablespoons Fresh Chives
- 1/4 Cup Cream
- 1/2 Cup Onion
- 4 Cloves Garlic
- 1 Ear of Corn
- 3 Oz Green Beans
- 1/2 Bell Pepper
- 1 Cup Tomato
- Butter
Steps
- Boil Water and Prep Veggies
- Boil 2 cups of water in a sauce pot for polenta
- Dice Bell Peppers
- Remove Kernels from Corn Cob
- Dice Tomato
- Dice Zucchini
- Trim Ends and Slice Green beans into 1/2 inch segments
- Dice Onion
- Cook Polent
- Add Polenta to boiling Water while whisking
- Simmer for 18-20 Minutes, until water is absorbed
- Cook Veggies
- elt 2 Tbsp butter over medium heat in a lauge saute pan
- Add Onions and garlic and bell pepper and cook 5 minutes, stirring often
- Zest Lemon
- Chop herbs and divide in half
- Add tomatoes, zucchini, corn and green beans to saute pan and cook 8-10 minutes, until tender
- Finish Polenta and Veggies
- Just before serving, add 1 Tbsp butter, cream, lemon zest and half the herbs to the polenta
- Remove veggies from heat and toss with the other half of the herbs
Plate meal by scooping the polenta on the plate and topping with sauteed veggies. :)
